La tàula de m’aura welcomes guests with a menu that celebrates the recipes and produce of the surrounding valleys.

Maura's expertise and her deep commitment to the slow philosophy come through in dishes that are simple, yet made with excellent local ingredients and Slow Food Presidia products.

Maura and Dario are also among the founders of the Slow Food Community for agricultural development and sustainable hospitality in Valle Maira, an initiative that has brought together farmers, breeders, shopkeepers and restaurateurs from the area, and for which the tàula de m’aura is one of the driving forces and meeting points.

Where the name comes from

Why la tàula de m'aura

The name comes from a play on words. Aura — from Latin and Greek — is the light breeze, but also the atmosphere that surrounds a place, its energy. Put an m' in front of it and it becomes my aura: Maura's own, her character, the welcome she brings to the kitchen and to the dining room.

Our kitchen

Our cooking rests on a fine balance of care for the ingredients, knowledge of local traditions and a willingness to innovate where it makes sense.

The recipes are overseen by Giuseppe Barbero (Gepis), a veteran with more than forty years in the kitchens of the Slow Food restaurants of Bra.

The wine list, put together with the Banca del Vino in Pollenzo, focuses on labels from Langa and Roero, alongside a selection from other Italian regions. It also features wines from the Alpine valleys of the province of Cuneo, names that are making their mark regionally and nationally, with particular attention to green wines.

It is a recognition of what we do at 1,703 metres: local ingredients, traditional Valle Maira recipes, products from the Slow Food Presidia and Community, and a cellar that champions the wines of Piedmont.
